Ingredients
10 large ripe tomatoes
1 medium onion, chopped
2 cloves garlic
1 tablespoon ghee or butter
jaggery (to balance acidity)
Salt and black pepper to taste
Instructions
1. Prepare Tomatoes: If using fresh tomatoes, blanch them in boiling water for 1-2 minutes, then transfer to normal water. Peel off the skins, remove seeds if desired, and chop.
2. Saut├й Aromatics: Heat butter in a large pot over medium heat. Add the onion and garlic, and saut├й until softened.
3. Cook Tomatoes: Add the chopped tomatoes to the pot. Cook for about 10 minutes until softened.
4. Simmer: Pour in the broth, add sugar, and season with salt and pepper. Simmer for 15-20 minutes.
5. Blend: Use an immersion blender or transfer the soup to a blender and puree until smooth.
6. Optional Cream: Stir in the heavy cream if you prefer a creamy soup.
